As part of this next phase, they are seeking two exceptional leaders who can help shape and drive the venue forward in the months and years ahead.
This is a destination gastro pub in the heart of rural Donegal - fires lit, pints flowing, food that actually matters, and a beer garden that fills when the sun shows its face. The First Opportunity:
This is a senior, hands-on Bar Manager role with full operational ownership.
You will take responsibility for the entire front-of-house operation while working closely with the Head Chef to ensure a seamless, commercially strong bar and food business.
This role suits someone who:

Key Responsibilities:
Operations & Service
* Full oversight of daily bar and food-led service
* Deliver consistently high standards of customer experience
* Ensure full compliance with licensing, food safety and H&S regulations
Stock & Margin Control
* Complete responsibility for bar ordering and stock management
* Tight control of GP across wet and food sales
* Weekly/monthly stock takes and variance management
* Supplier negotiation and pricing control

Team Leadership:
* Recruit, train, roster and develop bar staff
* Oversee kitchen coordination alongside the Head Chef
* Manage performance and standards
* Create strong FOH/BOH communication
Marketing & Revenue Growth:
* Drive local promotions and events
* Manage social media presence
* Maximise trade around sports, entertainment and seasonal opportunities
* Identify commercial opportunities proactively
Reporting & Systems:
* Provide clear sales and performance reporting to ownership
* Ensure operational systems are implemented and followed
* Flag risks and opportunities early
What We're Looking For:
* Proven Bar Manager or Senior Hospitality Manager experience
* Strong stock control and cost management capability
* Experience overseeing both bar and kitchen teams
* Solid understanding of HACCP and food safety
* Commercially minded and systems-oriented
* Comfortable working independently
* Full driving licence and own transport
Desirable:
* Experience opening or relaunching a venue
* Marketing or event promotion experience
* Strong POS and stock system knowledge
